Beet salad!

Yummy. I felt up to making a nice dinner tonight, so we are having Beet salad with baby spinach, candied walnuts, watercress and blue cheese. We hardly ever have pork, but decided to buy a nice tenderloin, so it will go perfectly with the salad.
After we have an early dinner, Mikel is going to take the kids to the bookstore for awhile so I can have a rest. I can’t decide whether I will watch the Oscars, read my book (The Pillars of the Earth; which I LOVE) or just lay down and rest.
Whatever I end up doing, I know I will enjoy having some “me” time. Spending all day in the house with 3 couped up kids is not that fun for me or them. Pretty soon, I should be getting a lift for my wheelchair, so I can actually take the kids somewhere by myself.
They are so patient, and I soooo appreciate their understanding on days when we can’t get out.
